[Extra! Extra!] Lake Plants: the Next Superfood?

Many a disappointed parent has turned back from a lakeside picnic and swimming excursion with their kids after seeing large amounts of slimy, green algae coating its surface. But what if, rather than being grossed out by algae, individuals were (gulp!) eating it?

These lake plants may be the newest innovation in superfoods, according to an article published in the Journal of Food Science and reported on by Science Direct. The study looked at Chlorella Vulgaris as a potential food source and found that it “holds immense promise”. Not only does this type of water plant contain a lot of great health benefits, but it could also help to lessen issues of food shortages worldwide.

First though, scientists and other experts will have to find ways to cultivate and process the plant materials. And of course, make it more palatable to improve the chances of individuals being willing to eat it.
